Pivotal Moments on an Amazing Journey
Early on in our JAi journey we were able to create an amazing experience at an outdoor event, and several COVID-pivots later, we’re delivering fresh craft cocktails to drinkers & lovers all across SoCal - and sipping on a few ourselves 😉
Lindsay was just 14 when she started her career in the restaurant industry. In the 21 years since then, she’s grown from hostess to server to bartender to manager to beverage director and finally to bar consultant (the person who develops the recipes and menu for top tier places), a role which allowed her to work alongside a Michelin Star chef, at the restaurant in Manhattan Beach she was most-recently employed at, Arthur J.
Cori’s career has meandered through several disciplines, weaving in a deep understanding of emotional intelligence as she served as a restaurant experience manager, events production, clothing retail, kundalini yogi, and Pattern Healing holistic wellness practice.
While Lindsay is our master mixologist, Cori is our visionary leader and manages the business side of things. Together they’ve created not just balanced drinks, but a balanced business, that is not just serving drinks, but serving our community through charitable giving, building a business that’s eco-conscious (with low-waste and a recycling program), and supporting other small businesses through collaboration and partnership.
Cori and Lindsay actually met while working together at a local restaurant in Long Beach 💖
Cori and Lindsay met at a restaurant where Cori managed the front of house, and Lindsay was bartending. They were ships passing in the night at work, but they made time to get to know each other and nurtured a spark into an amazing relationship.
“Well we fell in love behind a bar. We worked together at a local restaurant. And after our shift we would sneak off to our secret watering hole and spend hours just really diving in to who we were individually, what we wanted for the next chapters of life and that conversation developed into who we wanted to be collectively as a loving unit,” Lindsay says, “We fell in love over bottle beer and shots of Fireball.”
8 years later, it feels really refreshing for this pair to finally be spending not just their nights together, but their workdays, too - and to be building something that is their own, with all the autonomy and responsibility that ownership brings.
Waiting for the Green Lights

Sometimes, the best thing you can give your dream is patience — because when the timing is right, nothing can stop it from flowing with ease.
3 years prior to the shutdowns of 2020, Lindsay had developed the idea of Just Add Ice Cocktails to be a catering solution for requests she had been receiving by friends - but the rules were a bit different then, and red tape kept her from pursuing the idea. Every few months the idea would resurface, but so would the roadblocks. The liquor industry is a tough nut to crack - and it seemed like JAi might always be just potential.
While shut-downs and slow-downs made it clear that work would not continue on as “normal” for both Lindsay and Cori in early 2020, changes to the local regulations opened the door that had long been shut for JAi - and words of encouragement from a mutual friend created the momentum we needed to get this thing off the ground.
After 3 months of developing menus and sourcing ingredients, creating branding and printing labels, website-building and Instagram-posting, JAi had finally stopped being just a dream. Less than a year later, we’re happy to be serving a wide audience of individual customers across SoCal, and a growing number of organizations and corporations who are hosting virtual events.
When asked what feels different about this time, Lindsay says “This one feels like nothing but green lights.”

Valentine’s Day at Home, Alone, and Fabulous

Valentine’s Day is my favorite holiday and I don’t care who knows it. I mean, of course, I love Christmas, but I feel like Christmas is its own season and not just one day. So Valentine’s Day has usually been the one for me.
I love it for so many reasons, but overall I’d say it’s the general celebration of love mixed with all the glitter and shades of pink I love the most. And while I know it can get a bad rap, and single women are often portrayed lamenting this day “created” by the card companies for couples, I’d have to argue that being single is my favorite way to enjoy this holiday. In relationships I didn’t enjoy the forced pressure it brought to do something special, or the expectation on my partner to spoil me or buy me gifts. That never pans out that well in my opinion.
Instead, the years I’ve been single for it (which lately, has been QUITE a few in a row), I’ve fallen even more in love with the traditions I’ve created for myself around it. So if you happen to find yourself single this year, and most likely celebrating at home, here are some ways to make it your own and to deeply enjoy it as well:
Ask yourself what sounds like the best night in to *you*
I’m not a fan of blanket advice because there are 7 billion unique humans on this earth each with our own preferences and desires. So me telling you to “fill up a bubbly tub and light a bunch of candles and pour yourself a glass of champagne” may be horribly off-base for what your ideal night looks like. So spend some time thinking about what an extra special night would feel like to you and start there.
Maybe you’d love to host a small dinner party outside with a few friends. Or get dressed up and do a solo photo shoot at home just for the hell of it. Or put on your roomiest sweats and order takeout and binge watch murder shows. All that matters is that you’re enjoying yourself and doing something you love.
Plan Out a Good Meal
Every so often I’m in the mood to whip up a nice dinner for myself from scratch (code for making cacio e pepe 9/10 times), but if I’m being honest, I think I get the most excited about ordering food from somewhere else.
My personal favorite and savior during quarantine has been thai food from Bamboo Bistro in CDM, who thankfully offers both takeout and delivery. I also recently treated myself to my good friend Lauren’s (of The Gourmess) meal service and felt like I hit the jackpot. If you’re local, I highly recommend her to cook your meals whenever possible!
The beverage portion of a meal is incredibly important to me. (Fancy stemware also falls under this category). I’m typically a red wine gal so if I’m staying in for V Day, that might look like treating myself to a bottle that’s more than $10. But I will say that one thing I miss about eating out is the option to order a delicious cocktail. It’s the only time I’m enticed to stray from my cabernets. For a brief period in quarantine, I started pretending I was a mixologist, which was mostly just me shaking up freshly squeezed grapefruit juice and gin and adding some kind of garnish. But any drink recipe with more than 3 ingredients and I’m usually out. And while canned cocktails might work at the beach, I’m not about that life at home.
So the fact I can order legit restaurant-quality cocktails that I would 100% order if I was out, straight to my door thanks to JAI, is amazing. The added garnishes are also the cherry on top. I had the Drunk in Love for an early V Day treat with my dinner and it was perfection. Also such a fan of The Cheeky which happens to be my favorite cocktail color. Pour them in a fancy glass and I almost don’t miss eating out at all.
Self-love but not in annoying way
Valentine’s Day is actually the best excuse to show yourself some extra love. It gets to be a chance for you to treat yourself how you’d want a lover to treat you, without any of the fights when they don’t show up how you wish they would have.
It’s hard to utter the words *self-care* these days without feeling incredibly cliché, but here’s why I think Valentine’s Day is actually the best excuse to show yourself some extra love. So if you love when people buy you flowers, or make you nice meals, or run a bath for you, or give you a massage, give you presents, etc., etc. Take your favorite option (preferably multiple), and give them to yourself instead! Not waiting on other people to meet my desires has been one of the biggest gifts I’ve given myself. Don’t wait for pleasure to come to you, create it in any way you can.
Give some love away
There’s also soooo much more love to celebrate in this life than romantic partners. Let’s help spread it out a little bit, shall we? Making Valentines is by far my favorite crafting activity, so once a year I go all out and make as many as I can to send to friends and loved ones. When I don’t have a partner to focus my attention on, it allows me to take in and celebrate all the love and friendship I have in my life that much more, and so Valentine’s Day gets to be a perfect excuse to share that. So making Valentine’s, sending random Venmo’s to friends treating them to coffee or a bottle of wine, having cocktails delivered to their door, or making a nice dinner for your friends are just a few ways to share that love, and you’ll be making someone else’s V Day that much sweeter too ;)
So I hope that gives you a few ways to get excited about celebrating a holiday that you may have previously dubbed “unredeemable,” and also remember that every day is a chance to do the things that sound most lovely and enjoyable to you, and to add some extra love to this world.

Can Drinking Alcohol Be Healthy?
At Just Add Ice Cocktails, we're big fans of having our drink and enjoying it, too - so we've taken the time to craft cocktails that are not just delicious, but are also low in sugar and meant to be mixed with ice for lower caloric density. We make them fresh, with natural ingredients that you'll be familiar with, and we don't add preservatives or additives, including no added sugar or flavorings.
However, we also know that we're not medical researchers or physicians, and that this is an area of science that is still highly debated. Only you can decide what's right for your health, and we encourage you to actively explore that with regularity, as we find it often changes through different seasons of life. To that end, we'll try to provide you some ideas and thoughts of our own below, backed by a little science, and we hope that you use this as fuel for your own exploration. Cheers!
What is unhealthy about drinking cocktails anyway?
When it comes to drinking cocktails, or really any sort of alcoholic beverage, including wine, beer, or anything else, there are 2 elements that you’ll want to concern yourself with to limit health risks: sugar and alcohol.
“Your liver metabolizes sugar the same way as alcohol, and converts dietary carbohydrates to fat," says Dr. Frank Hu, professor of nutrition at the Harvard T.H. Chan School of Public Health. "The effects of added sugar intake — high blood pressure, inflammation, weight gain, diabetes, and fatty liver disease — are all linked to an increased risk for heart attack and stroke.”
Can Alcohol Consumption Be Paired with Health Benefits, or Do They Cancel Each Other Out?
Studies show that drinking alcohol creates oxidative stress and that this can be at least partially counter-balanced by consuming antioxidants prior to or along with the alcohol. Those studies did not seem to indicate one could get a net benefit from drinking an alcoholic beverage with antioxidants in it, but rather a potential balanced-out effect was noted. Heavy drinking can impair nutrient uptake during digestion, though.
Just Add Ice Cocktails with Antioxidants:

The LBC contains orange juice, cucumber juice, and lime, all of which are antioxidants
Cabo contains watermelon and lime, both of which are antioxidants
How can I drink alcohol and still be healthy?
By limiting the concentrated and processed sugar in the drink and reducing the alcohol by volume (abv%), you can make drinks that are both health-conscious and delicious.
Choose drinks that have moderate amounts of alcohol - generally, this will be wine, beer, or mixed drinks (cocktails) with only 1 to 1.5 ounces of alcohol per standard drink (i.e. 1 shot of distilled spirits per poured drink)
Choose drinks with lower sugar content - ideally, you're aiming for as little processed sugar or concentrated sugar as possible, as natural sugars in natural levels of concentration really aren’t problematic for most people
If you prefer drinks that have more sugar and/or alcohol content, consider using ice, seltzer, or other mixers to increase the volume (and thus reduce caloric density - more on that concept below)
At the end of the day, though, only you know what works best for you - and we encourage you to listen to your deep inner knowing here.
Why It’s Not About Portion Control or "Moderate Drinking"
Portion control always seems to be a favorite recommendation among dieticians and health experts, but the truth is, limiting yourself and feeling restricted often backfires - we’ve all been there with strict diets that we can’t stick to for more than a few days.
Instead of Trying to Moderate Alcohol Consumption, Play with Caloric Density and Indulgence Factor
Caloric density is the number of calories per volume - for example, a floret of broccoli vs. a spoonful of ice cream - each is roughly the same size, but it’s pretty easy to see the broccoli is far less calorically dense than the ice cream. By decreasing caloric density in your alcoholic drinks, you’ll make it less likely that you’ll overindulge (either with too much sugar or heavy drinking), by feeling fuller sooner.
Add any (or all) of these to your alcohol to decrease caloric density:
Ice - the smaller the pieces of ice, the faster they will melt and the lower the caloric density of what you actually consume, though sometimes the visual representation and less water mixed in is ideal, this is why whiskey is often poured over 1 single large ice cube and mixed drinks are often poured over crushed ice.
Water, seltzer, or other lower-calorie liquids (although try to skip the ones that are overly processed)
Now "indulgence factor" may be a new concept to you, but intuitively you likely already know that when you make something feel special, you enjoy it more. Think of this as "pleasure density" instead of caloric density.
Here are some ideas for increasing the "Indulgence Factor" of your drinks:
use glassware that feels special
add crushed ice or ice spheres
add a garnish (did you know all of our drinks come with a garnish for each pour?)
Make it a ritual - maybe you enjoy a special cocktail as you soak in the tub, or maybe it's your girls' night tradition, or perhaps you just make it a habit to stop at sunset and re-center yourself in gratitude for a moment as you transition from work-mode to home life - whatever it is, make it a moment you're present for and savor fully.
The Essentials of a Modern Cocktail Set: What to Invest in for Great Drinks at Home
When it comes to making craft cocktails at home - you know, the kind that actually impress your guests (and delight the palette) - quality bar tools and stocking the essential ingredients are the keys to whipping up a quality cocktail on short notice. Of course, most of us have a favorite cocktail (or few), and it can be tempting to shop for just those few items - but when you really want to level-up your hospitality skills, this guide will help you decide exactly where to invest for Mad-Men-meets-Casablanca sophistication that you and your guests will greatly enjoy.
Of course, you don't need a cocktail set -- or really anything other than ice and glasses -- to enjoy our Fresh Craft Cocktails.
The Best Cocktail Starts with Great Ingredients & the Right Tools
Okay so what exactly is a cocktail set? A cocktail set refers to the tools you'll need to make advanced drinks and their fancy garnishes.
It most commonly includes:
Cocktail Shaker
Bar Mixer (for "stirred, not shaken" drinks)
Strainer
Jigger (measuring cup for liquor)
Bar Spoon (has a long thin handle)
Muddler
Cocktail glasses
Bottle opener (for wine and beer - which are sometimes mixed into cocktails)
Ice Tongs and Ice Bucket
More Than Just a Cocktail Shaker: Which Tools to Buy & Which to Skip or Save for Later
Stainless Steel Cocktail Shaker: The Cobbler Shaker
This truly is an essential piece for the modern cocktail bar. A cocktail shaker combines your ingredients in an evenly-mixed manner, to create a well-balanced experience from the first sip to last. The Cobbler Shaker is perfect for home use because it contains a jigger (usually the cap) and shaker with a built-in strainer- 3 of the most important tools to have on hand. There are other styles of shakers, like the Boston Shaker and French or Parisian Shaker, but they're usually meant for professional bartenders or those who are making very large batches of drinks, making them less than ideal for household use.
Stainless steel is a great option because it's easy to care for, clean, won't be damaged by acids or other ingredients the way some other metals may. If you're going to be using a Hawthorne Strainer, we recommend you buy a Cobbler Shaker that has one included, to ensure a perfect fit. More info on strainers below.
Glass bar Mixer: For “Stirred Not Shaken” Drinks
So glass bar mixers are not usually included in those pre-packaged cocktail sets, but honestly, this is how most people make cocktails - adding in ingredients to mix - so why not level-up the type of cocktails you’re already making by buying the tools to mix them to "every sip is the same" perfection?
Glass or crystal (which is a type of glass) is a good choice for a bar mixer, but if you're looking for durability and convenience (read: dishwasher safe) in a piece that has that vintage beauty of a crystal piece, consider pressed glass like the piece below.
Strainers for Cocktails
Now, most of the time, you’re just going to use the built-in strainer from your cocktail shaker, or none at all (because sometimes you don’t want to strain the drink, or perhaps this drink doesn’t need straining).
However, when you have need of a strainer for use with a stirred drink (in your bar mixer), we recommend the Julep strainer (the slotted spoon type) in stainless steel, which is a bit easier for most novices to control as they pour than the typical hawthorne strainer (with the spring around a flat round shape) or a mesh strainer.
The hawthorne strainer is generally used for shaken cocktails. While the hawthorne strainer certainly has pizazz, if you don’t know exactly what you’re buying and you get one without tabs or with sharp edges or flimsy welds on the spring - or even more commonly if the one you buy simply doesn’t fit your shaker or mixer just right - it’s going to be a real nightmare to pull off a good pour. these strainers work really well when they’re high quality and are made for your shaker (and usually that means they come in the same cocktail set together), but can otherwise be tricky. So stick with a paired cocktail set for hawthorne strainers.
Mesh strainers do exist for cocktails, and they can also be fairly easy to use, but they are usually reserved for cocktails with egg whites in them. These cocktails would be shaken, and then poured through both a hawthorne strainer and mesh strainer to create a creamy mouth feel with a foam the egg white creates.
Jigger: Measure for Balanced Flavor Profiles in Your Cocktails
Cocktail recipes are balancing distinct flavors to create an enjoyable taste and mouthfeel, and if you want a truly great cocktail experience, you're not going to get it by "eyeballing" the pours. A jigger is a handy measuring tool that allows you to pour 1 oz of liquor (and often they're double-sided for a 1.5 oz pour as well) with ease.
Opt for a double sided jigger if you can - it will make your life behind the bar so much easier - and stainless steel is the optimal choice here as well.
Bar Spoon: Mixing Spoon with a Long, Thin Handle for Stirring
When it comes to making drinks that aren't shaken, a bar spoon is what helps you bring the drink flavors together. There's probably no such thing as too long of a handle with this mixing spoon tool - you'll want to keep your hand dry and out of the drink as you mix in your bar mixer, so use that height as your guide. We recommend sticking to stainless steel or glass again here.
A Note on Muddlers
Unless you are a big fan of fresh herbs and fruit in your cocktails, a muddler is probably not a bar tool you need to invest in right away. That having been said, if you love Starbucks' take on tea with muddled fruit or you're a fan of mint juleps, we recommend a stainless steel muddler with a long, thin handle that will allow you to make individual drinks just as easily as larger batches. Always muddle in stainless steel, and never glass.

Ways to Celebrate with Loved Ones (That Don't Include the Obvious Secret Santa Gift Exchanges or Video Chat Options):
Enjoy One of the Most Beautiful (and Visible) Star-Gazing Opportunities of Our Lives on December 21
So it's not actually stars, but 2 planets you'll be able to see quite visibly on the evening of Dec. 21st - Saturn and Jupiter. But that's a really good thing since our skies are full of so much light pollution, which often means stars aren't visible in the skies above the LA Metro. And not only will this be bright enough to see, but it will also occur early in the evening- visible just a few hours after sundown (from around 4:30 pm to 7:30 pm)- so everybody will be able to enjoy this event. This rare event won't occur again until 2080 and is being called a "Christmas Star" because of the date (the winter equinox and traditional day of Yule) and the close proximity in our line of sight of these planets (along with a few stars, too) which may mean that they may appear as 1 to the naked eye.
Make it a Special Event by Adding:
Fire Pit, Outdoor Heaters, and/or Wrap yourselves in cozy blankets - bonus points for making s'mores

Christmas lights are a must-have for a true holiday experience - and touring them from within your car allows you to maintain social distancing (and also to get out of the house for a few hours, which I think we can all appreciate).

Everyone loves a good Christmas movie - and we all have our favorites - but with streaming replacing Cable, it seems harder than ever to figure out where to watch them. An unexpected winner for streaming in recent months at our house has been IMDB (yes, that IMDB, now offers free video streaming - and the ads are somehow magically muted on Amazon TVs? It's a Christmas miracle 😉).
